Lemon-key lime Cheesecake
Feb. 27th, 2006 02:54 pmJust wanted to pass along a successful experiment from this past weekend:
Lemon-Key Lime Cheesecake
(graham cracker crust recipe of your choice, pressed into a springform pan)
4-8 oz. packages of cream cheese, softened
1 cup sugar
4 eggs
1 tsp. vanilla extract
1 tsp. lemon & key lime zest
1/2 cup lemon & key lime juice (we used 1 juicy lemon and 5 key limes)
Mix cream cheese and sugar together. Add eggs one at a time and blend well. Stir in remaining ingredients.
Pour into springform pan over graham cracker crust. Bake in a 350 degree oven for 55 minutes.
Cool then place into refrigerator and serve chilled.
I'd been promising to make Key Lime Cheesecake, so we decided to experiment with this and it was very yummy!
